Sāo Carlos is a single origin Brazilian Coffee. We are excited to bring this direct trade partnership to you that supports local Brazilian coffee farmers. These coffee beans of the Bourbon varietal are grown at an elevation of 1,120m - 1,250m and processed using the Yellow Honey method in the Nova Rezende and Sul de Minas Gerais regions. We roast Sāo Carlos coffee beans at the Hale roastery in Toronto and love the rich tasting notes of chocolate, toasted almond, and Zante currant.
The honey process started as an experimentation, trying something different than pulp natural, and now it's a core process at the farm. This yellow honey highlights the creamy mouthfeel for the coffee, while holding its dried fruit sweetness and toasted nutty finish. The entire estate is located in the highlands of the Nova Rezende, surrounded by the natural forest.
