The Consaca Story:

Consaca is a municipality located in the Nariño department of Colombia. Coffees from Nariño are highly sought after due to the region's unique growing conditions and the resultant exceptional cup quality. 

Nariño is located in southwestern Colombia, bordered by the Pacific Ocean to the west and Ecuador to the south. The region boasts high altitudes and proximity to active volcanoes, which provides mineral-rich soils ideal for coffee cultivation.

Most Colombian coffees, including those from Nariño, are washed processed. This means the cherries are depulped, fermented, washed, and then dried. This method results in a clean, transparent cup that showcases the inherent flavors of the coffee. Nariño's unique geography allows coffee to be grown at some of the highest altitudes in the world, sometimes exceeding 2,300 meters above sea level. This extreme altitude, combined with warm days and cool nights, allows beans to develop slowly, leading to a pronounced acidity and complex flavor profile.

The Castillo varietal is a coffee varietal that was developed and introduced by the Colombian Coffee Growers Federation (FNC) in the 2000s. It's a hybrid of the traditional Caturra variety and the Timor Hybrid, which gives it resistance against Coffee Leaf Rust. In terms of flavor, Castillo can produce a diverse range of profiles but tends to maintain good acidity and body, typical of many Colombian coffees.

Economic Significance: Coffee is vital for the Nariño region, providing a livelihood for many smallholder farmers. The challenging geography has led to smaller farm plots, and as such, there's a significant focus on quality over quantity.

Sustainability and Conservation: Colombia, including Nariño, has been pushing forward with sustainable farming practices. There's a notable emphasis on environmentally friendly methods, conservation of resources, and organic farming practices in many parts of the region.
